Coconut Chia Seed Parfait with Raspberry Mousse & Toasted Hazelnuts

A nutritious and easy breakfast full of omega’s, fibre and protein


Serves 2

  • 400ml can coconut milk
  • 6 tbsp chia seeds
  • 1 banana
  • large handful of fresh raspberries (saving 6 for the top)
  • 4 dates
  • 2 tbsp. toasted hazelnuts

1. Mix coconut milk and chia seeds and leave for 10 mins
2. Blitz banana dates and raspberries
3. Divide coconut parfait between two dishes/ glasses and top with mousse, fresh raspberries and toasted hazelnuts.
